Can these "sprouted flours" be used in the place of malts?
Say 8lbs corn meal 2lbs sprouted flour something like that
Not great considering shipping prices but if they could be purchased at the store and on sale they might be good

Hard to say? Doesn't give enough information to tell. It all depends on how they process it after sprouting. My guess is the killn dry it then mill it. If the killn is to hot it will kill the enzymes.
Only way to know for sure is to try a small batch. I would have some good malt or powdered enzymes on hand. Just in case it didn't work.

They dont mention the exact process but it sounds like it might work, it would be nice to have various malts available right at hand at the regular grocery store though, no?

That looks promising BD. But there is no real way to know the DP of it. So I would go by the low end of the range. Just to be sure.

So it looks to me that it is very likely the enzymes are alive/intact.

I know on the beer brewing side it's something of a holy grail to find readily available off the grocery store malts for brewing so these might just do the trick.
I think they may have these at A&P as A&P is listed as a sponsor under their products at Amazon.
