Prussic acid from fruit pits?

Post by Norwest »

Hi,

Just mashed 80 lbs of cherries using the grinder on my Happy Valley apple press. I ran the cherries through the grinder backwards and slow as the manufacturer recomended. The gap between the grinding wheel and housing is big enough to alow the epits to pass through when running backwards. Despite my best efforts I did end up cracking/crushing some pits as they got hit by the grinder teeth. Based on the audible cracking sound I could hear I figure I broke a dozen or so pits in the whole batch. How much should I worry about prussic acid (cyanide) leaching into the wash from a handfull of pits? Cant detect any bitter almond taste in the juice :) .

Thanks,

Norwest
