I have 3 gallons of single malt(golden promise) unpeated whiskey on toasted oak sticks aging at 64%. I also have 4 gallons of Brandy made from Cab Sauv sitting on sticks aging at %65. Each are a few months old have developed very nice color and oaky/vanilla/maple notes, however are lacking something. I know that age will certainly improve but I wanted to learn more about the process in the meantime. I wanted to do some 100 ml bench trials and see how some oloroso sherry might add/change them. Has anyone any advice as to additions? I have no idea where to start as far as %'s. Ive read somewhere that 1-5% sherry to a whisky is sometimes used. Any expertise is welcomed. Thank you all in advance.

never heard that but they do prefer wine barrels to age scotch in.
