I had lunch with the wife a this Mcmenamins today. Bart was working on a brandy and was more than happy to chat with us about this still. It was pissing out something fierce. He had to pre-cool the water intake with some ice--that is one big ol worm and requires a lot of cooling. He was saying that one of the more challenging parts of putting this all together was meeting fire/city code. The difficulty is that the still is inside a historic building. The work had to be done with minimal changes to the structure. It is funny that it sits inside a very old barn with zero insulation and cracks in all the siding. Yet, they made them install a giant vent and a massive air handler so that their is cross ventilation.

We spend the better part of an hour chatting with him...what a nice guy! We sampled some brandy and white owl and they were both very good...

If you are in the Pac NW and you want something interesting to do...go check this out. The restaurant is great as well.
