Ok so I have searched here and all over the interweb and found nothing. Im sure its there Im just not finding it. Here is my issue.
EDIT:Im using a 6 gallon mix. I used 3 oz distilling yeast and 1 small pack of red star champagne yeast.
1st run-Started everything Friday night. I used peaches and about 2lbs of sugar. Blended the peaches and put them in a clean bucket. Heated water and melted sugar in it. Started the yeast like it said to on the packet. Once it was nice and bubbly I added it very slowly while mixing then sealed it with a air lock. Before I went to bed I checked it and the lock was bubbling nicely. Sat it had slowed a bit so I shook the bucket for a while and the bubbling picked up. By Sunday it had stopped. I tried shaking the bucket and nothing happened. It was dead.
2nd run-(started yesterday at about 6PM)I used a recipe I found on the home site here using high grain feed and sugar. I covered the bucked with 4 inches of grain added hot water and 5 lbs sugar then more hot water and mixed forever until it had cooled enough so it wouldn't kill the yeast. This time I used distillers yeast from the brew market. I also tossed in a 6oz can of tomato paste and juice from half a lemon. Started it like it said just like I did the last time. this time the lock was bubbling like crazy. This morning it had slowed but it was still bubbling nicely. By the time I got home tonight it had stopped. I stirred it a bit and it is bubbling again. I also added another packet of red star champagne yeast in a last ditch effort to keep it going the long enough to ferment properly. I am planning on leaving the lid off tonight and stirring periodically to keep O2 in the mix until tomorrow night when I will seal it again.
I know I should use DAP but I have seen stories where people just use corn meal sugar and water and have no issues. I have a thermometer in the bucket and its at 28C. So from what I have heard it is in the right range. I keep it in my little laundry room where the temp dosnt change and it gets no breeze or sun or anything.
Sorry for the long post. I want to get all the info in so I can get a good answer. I would like to figure this out on my own because Im sure its in the forum but I cant find anything and I dont want to waste this batch so Im reaching out. Thank you for any help you may have.

so what do you want? you thank it stalled? use a hydrometer or if you have none taste and see if sweet.

Im hoping for some good advice. My hydrometer reads 2% and it taste like beer. Not very sweet at all.

first of all quit mixing it.next check tomorrow and see if it changed .if not then it stalled.
it should go to 1.00 or .99?..you should let it clear anyway and that will take a day or more.
with 5lb of sugar in 6 gal wash it was 1.050 /7% ? so it is just about finished or is.
if you keep mixing you cant tell with a hydrometer as grain and other will throw off the reading.
how long it takes to ferment depends on 1)how much sugar 2) the temperature 3) how much and type of nutrients 4) how much and type of yeast..
it should go to 1.00 or .99?..you should let it clear anyway and that will take a day or more.
