High Ferment Temps
I searched the site but could not find the answer to my question. I am using KS 's sweetfeed recipe. I bumped it up to 18 gallons. I am using a 20 gal brute trash can for a fermenter. I am using bakers yeast. I started the yeast in water for 15 min before pitching. I pitched at 90F. I put a blanket over the fermenter and went to bed. When I got up this morning the temp of my wort was 99.3F. Why the high temps? Too much yeast?? I took the blanket off in hopes of cooling it down. If I distill this will my distillate have an off taste due to the stressed yeast?

yeast produce there own heat.bread yeast is not bad in the heat department,can stand 100f and fast/quick rise 120f.
