put together a bucket of sweet feed last night, have a corn meal and sugar wash bubbling away, a gallon of hard cider waiting for the mini pot, and a wash made from lemon head candies and sugar that will be a lemon vodkaish stuff for mixed drinks.And 5 gallons of mead ready for the pot. I'd have more going, but I ran out of fermenters...
I told the officer "I have my .45 on my hip, a 9mm in the console, and my shotgun under the seat" He said "Damn! What are you afraid of?" "Nothing" I replied...

Don't add the tp next time. Molasses has plenty for yeast to eat and be happy! If you want to add something, add a.tsp or two of epsom salt.

thank for the tip beerswimmer I'll do that ! aslo just finnished the 3 gal spirit run on that rum, after cuts got 1 1/4 gal of 145 p to put on oak . havent bin doing this very long about 6 months but doesnt seem like much yeald for a 15 gal wash
taste pritty good so no complaints there

What did I make today??? Well, I poured cuts from a single malt barley into my aging milk can. Think I'll try adding Wacabi sticks, vanilla bean, and honey, hmmm.
Also started a new batch of BW...
And for the wife, poured up a batch of what I call, "Blue berry bloomer dropper", its the same process as strawberry panty dropper only blueberries, damn good stuff, I like it warm...

Started another 10 gal batch of rum yesterday, had 5 gals of dunder from my first batch couldnt let go to waste had such a strong mallasses smell to it ! never intended to make more rum since I am not big rum fan and have 2 gal on oak, but what the hay more is better right ?

1/2 a bucket of sweetfeed wash 1/4 bucket of rum wash and a gallon of rum feints - i made rumsky!

White and blended off the still then cut to 60 for aging. Initial thoughts; slightly lighter than my rum (that wouldn't be hard though I like HEAVY rum) I would say the sweet-feed adds a bit more of a floral note to it; rum is rich and aromatic to my nose, this was not sharper but lighter? brighter?ron71157 wrote:Fantastic....tell us how it tastes!!!![]()

Adds a nice little level of complexity anyways.
Center cut (3.3L cut to 60%) on oak in my study
Edge cuts (more straying into heads and tails but not too skanky) cut to 45 with some oak, muscavardo sugar and some caramel put up in corked beer bottles with my 'headbanger _______, Open at worlds end' (rum in this case) label, as opposed to my normal Triquetta stills label for the well cut and blended stuff.
I've been making my headbanger range from the slightly dubious stuff that I'm done with and not going to keep feints from - calling it an experiment in long term aging. (attic goes higher and lower in temp, but is mostly higher)
Where has all the rum gone? . . .

cooked sweetfeed V today got 70 Ozs from 140 - 100 proof..a little bit further into the tails than usaul...letting it air out for the final cut in a couple. Finally got a keg for a boiler, after the run did some remodeling on the column in preparation of an easy flange manufacture this weekend.
Very excited!!

Running first stripping run of 40 lbs red wheat malt AG. The grain was split between 2 20 gal fermenters. For todays run I pulled 10 gallons clear, 5 off the top of each fermenter. I then strained and squeezed out another 11 gallons which Ill leave sit till tomorrow to settle out.
I drank a pint of the mash before running it today
Delicious! Like unhopped wheat beer. Guess thats no shocker since it IS unhopped wheat beer basically.
Wheat malt and beer yeast haha.

Ran my 7-8 gallons of Rye Mash - it was very testy to start with and I slowed it wayyyyyyyyy down to a drip or two a second. Collected 6 jars around 250 ml or so per jar. Rye mash has a different smell and taste all together - AND I LIKE IT! tasted pretty good raw. I have it airing out now and will blend the jars later this weekend and proof down to about 90 or so proof.
Got to thinking I hated to waste the rye backset - I had a couple of open fermentors not being used right now so I formulated a plan. started two new fermentors with 7 sugar and used one gallon of hot backset per 7 gallon fermentor. Got the sugar all melted and added 7 lbs of corn and adjusted the water to meet my SG to around 12% ABV. I am interested to see what kind of flavor the rye backset adds to the UJSSM ( if it can be called that anymore with the addition of the rye backset!) Pitched yeast @85 degrees and within 15 mins both were bubbling away!

Stripping round 2 of the batch 2 posts down. Good tip to let it sit for a day, loads of yeast sludge in the bottom of these 2 5 gallon buckets. Ill let you know if this batch tastes any different that the last 40 lb batch I did, where I just squeezed the grain out and ran it right away. At first sip doesnt seem different. But this takes some careful experimentation with the Glencairn tasting glasses I got for xmas

Just finished the spirit run of this round of 40 lbs Red Wheat malt. Here's my yield by jar, before cuts...
40 lbs red wheat, mashed at 146-140 over 3 hours, with 1/2 gallon backset added for pH adjust, and 4 tsp gypsum. US-05 high attenuation ale yeast.
1 - 78% (pint)
2 - 75% (quart)
3 - 72% (half gallon)
4 - 68% (quart)
5 - 66% (quart)
6 - 64% (quart)
7 - 56% (quart)
8 - 48% (quart)
9 - 40% (quart)
10- 30% (quart)
2.625 gallons @ 60% avg (before cuts)
EDIT: I did the cuts from above and added it to the first run keep. 80 lbs total red wheat malt gave me 2.75 gallons at 67%. Thats 23 fifths at 40%. For $48 a 50 lb bag of wheat malt this works out to $3.34 per fifth.
Beats the hell out of the $45 per fifth I paid for the same from Koval and Breuckelin wheat whiskeys. Gonna cut this down to 55% and dump it in a 5 gallon barrel and try to pretend it doesnt exist for as long as I can keep my mitts off it.

today i tried out my new keg boiler and cooked WPOSW rum second generation...letting it air out for the final mix..mixed 6 ozs from last weeks sweetfeed V run with a can of coke and some limeade concentrate...very refreshing. Started another batch of WPOSW for an upcoming nuetral run. Generation VI sweetfeed almost ready to clear. After my sweetfeed is used up i think i'll try an AG for fun.
final tally 80 ozs @ 120 proof set up 1 qt on oak and 1 on applewood.

well bin playing around making rum latley, did a 15 gallon double run to start with on my first time at making rum couple weeks ago. I used 1-1/3 gals 33% sugar rated feed molases and 4ibs brown sugar per 5 gal. It stopped working at 1.40 SG
was to much molases Was realy strong even after the spirit run, should of run 3 time looing back , but its on oak now. Anyway the dunder from that batch was also realy strong still also tastes and smell wonderful. So next batch I use 50% dunder in 10 gal batch with 8 Ibs brown sugar. Did not add any mollases ! I have to tell you guys the hearts of that first run was amazing I can't bear to dump it into a spirit run . I did run it slow slow just to see what I would get and sure glad I did. Out of a 10 gal wash I got 1/2 gal heads @ 140 P , 1 GAL !!! of heart 1/2 gal was 122 P other 1/2 gal 110 P 3/4 gal tails . Thats the best I ever done on a single run whole gal of good stuff

I just started my first sweet feed wash. 15 gallons water, 25lbs sugar, 1/2 five gallon bucket sweet feed "I added some cracked corn to it as well it seemed light on the corn in the sweetfeed" and then let it cool and tossed 3 tsp of distillers yeast. Smells really good already. Starting SG 1.070

Started a panela rum. 35 gal batch with 45 lbs of panela. SG fell short. Didn't know what to expect from this new panela. So I bumped it with 4 lbs of sugar. It's a 1.056sg. Pitched the yeast and it was going in 20min.

Did me a sweet feed wash about 2 hours ago. 5gal.batch used 4" of feed in a 5 gal bucket, put it on the stove with 3gals. of water. cooked for 45mins at 155*F, killed the heat and let it sit for 30 mins. Strained into my ferment bucket added 6lbs. of sugar, and 2gals. of cool water, agitated the heck out of it , then pitched my yeast in it at 85*F. SG before pitch was 1.070. Was using only 5lbs. of sugar in my other batches, (this is my 4th), but when I got to use my hydrometer this time is was 1.055 and thought I would bring it up just a little. Got 1 settled out ready to go with it tomorrow.

i started a 5 gal batch with 4lbs of cracked corn 8lbs sugar and one pack of vodka clear yeasties yeast was working so hard it over flowed for about a cup

Ran 14 gal of UJSSM (4th Gen) this weekend and I must say it came out very well. Airing it now and then I will oak some after blending.

Ya PP I would like to know what panela is also !!! what I made today was a surprize on the out come
took all my heads and tail I collected last few months about 6 + gal's moslty rum, sweetfeed little UJSM after 1 3/4 gal more heads got a 3/4 gal of some real nice tasty drink @ 125 proof , the rum comes through real lite with a sweat after taste , very drinkable on the rocks
what else can you call it but Rumiskey

Hey wfw how ya been! Did some research on this. Panela is boiled down sugar cane juice and then packaged in a brick form. Panela is the Coulmbian version. Piloncillo is the mexican version, usually in cones. Jaggery is the version from India. I looked through our recipe sites here and didnt find a recipe yet based on it, but from what I read elsewhere on the web it has a ton of minerals and nutrients for yeast so no extra nutrients are needed, perfect. I dont use them for my AG's or beer either. Been searching high and low for the stuff around here and and cant find it for anywhere near the price others here are reporting if you search here in HD on panella. I looked online too. I did pick up a package of Piloncillo, $2.50 for less than a lb
Its delicious, like brown sugar only better. Ill keep searching and let you know if I find a good source.

Got another 15 gal batch of rice ready to go for some vodka, my son likes the stuff , I just made it to try makin it not a vodka fan. ........ sounds like you made way to much of that red wheat !!! better send some my way save ya from barrelin it !! cut cost even more !!!!!

Where I am from just lucky I can find sweet feed , allthough I did find 3 1/2 gal pals of feed grade molases for $ 14.00 I use on my first attemt at rum , came out to strong on the molases for me even after 2 runs ! next generation was much much better after maken a few ajustments. Will have to check in around this coming apple season have an amazing Idea on a apple press you'll want to see !!

Fermenting some peated malted barley on the grain. 6 ppm on turf only, but it will shine thru.
Also fermenting gen II on my rye bread sugar head whiskey. Still bubbling strong!
Macerating 3 liters of a new herbs bill better suited for an old style (whiskey based) genever.

4.5 gallon WPOSW i dumped 1.5 on the floor transferring it to the keg..stupid !!! anyway 40 ozs @ 94% very clean
