Oaking question

Post by jmesle »

I've taken some UJSSM out of 1.5 gallon barrel after about 2 plus months. It has good color a good flavor in my opinion. Ive given samples to various people who had very good things to say. One person on the other hand is trying to give me good criticism in hopes in improving my product. His comments were that it had a good oak flavor and that I should be very happy for my first time around. The only thing he said he didn't like was it was a little on the sweet side for him. I told him it was a sugar wash but I agreed after another taste. So with that said, it was a slow single run off of my pot still that I Oaked. If I would have stripped and then done a spirit run would it have taken some of the sweetness out of it? I wasn't in the habit of doing that before for fear of losing the corn flavor. I guess i just figured another run would just bring the proof up and take my flavor with it.I have since added a thumper and have put feints from previous runs as the charge. I was hoping someone would tell me this would remove some of the sweetness and maybe a little of the flavor. I Oaked some with of it that I ran this way. Time will tell me but I know some of you can tell me right now

I find that aging proof alters the sweetness of the final product. It seems to me, using Medium Plus oak cubes from Morebeer.com, I get a sweeter taste if I oak at 55-60% as opposed to a higher aging ABV like 65%. I also find that doing double runs of UJSSM if I add fresh wash to the spirit run to dilute it also increases the sweetness. I make product for myself, I try not to get wrapped up in what others think of my product, unless they are a fellow hobbyist.

Hope this helps
cheers

Well that's good to hear because I oaked this time at 65. Last time was 55 so that may make a difference this time around on the sweetness. Thanks for the input
