Hello folks, this is my first recipe post. My wife had some dried sweet cherries in the pantry for a while and I thought I'd put em' to use. I was wanting to try making wine so I searched for a recipe to do so...http://winemaking.jackkeller.net/request175.asp
I followed these directions except I had two pounds of Cherries so I doubled up and I also used just bakers yeast (worked just fine). This took two to three weeks to ferment. During that time I decided that I was going to pot still the product to get Brandy? When the ferment was done I racked the two gallons in 4 separate bottles( 2 liter) not quite full each and freeze them. I also left about 4 oz wine on the side to use later. Once frozen I turned them up on Quart jars and let the jars fill up(freeze concentrate)=1 Gallon 20-25% ???...tossed the remains. I then did a single run and ended up with 1 qt hearts @ 65% very nice aroma and taste right away!
The 4oz of Wine that I put aside I sweetened with a liitle sugar and topped the Brandy off with and cut down to 40%. Aging now but good to go already!
