Normally I put in one or two of those big freezing elements that keep your fridge cool when power is down. It will clear in one to two days.

After a quick trial with a sugar wash to see if I could run my reflux still without the packing, I've decided I'll try this recipe out. I have two fermenters set up last night, bubbling away, and will probably put a third one on today. 3 seems to give me the right amount of low wines for a good spirit run.

One question, do you stir your washes at all through the fermenting process? there is a fair amount of sediment sitting on the bottom of the fermenters.

Also, it's probably here earlier in the thread, I'll have a read back soon, but do you leave the lees in the fermenter for the second gen?

Cheers,
Dave.

I don't disturb the ferment. I take out the thrub and start a new gen with backset from gen I and new flakes.

Sure, no problem!

It will sour (PH) the wash, introduce more taste (different taste, so more complexity) and add nutrients.

Odin,
I pulled around 5 oz out of hearts during a double batch stripping run nd cut it to 90 proof.
That was some really good sippin , so I gave 1/2 a flask to a buddy of mine and got a really good compliment.
Can only imagine what its like after a few gens and a little oakin plus some age.
I have already started the second generation wash which is bubbling away as I type.
Thanks man, this is a keeper.

Odin,
Was planning on using oak chips.
I did the spirit run last night, and its pretty good, although the flavor of the stripping run hearts was really really good.
I might just run it once from here on out.

Is this nice white or would you recommend adding some sort of oak like medium chips maybe like 3 or 4 and then aging for 2 months? I learnt the hard way that if you put too many chips in the spirit per qaurt it ages really dark which i dont mind but i also like a lightly coloured whiskey

Odin's Cornflake whiskey is going well, like Odin corn isn't available here in decent quality, if at all.

So, I'm on the 4th ... Um 5th corn flakes wash, and I'm positive it my fav at least over the all bran. It gets good proof numbers and from a small pot (2.5 gal ) run I'm getting a good liter of mixed cuts @ 90. So a big thanks to all.

Btw got a hold of some medium dark French oaking chips from a local brew shop and let some 85 sit for about 2 weeks. Damn it's good.

I don't think it over the top, but sure does come out smooth.
Recap.
8 lbs sugar
4 cups crushed (by hand) flakes I prefer Kellogg over store brand clears better and ferments quicker
8 table spoons fleich and ADY
5 gals h2o

At a 2 ta 1 sugar to water heat water and dissolve/ invert sugar
In 2 qts hot water dump crushed flakes helps em dissolve b4 mixing it all let stand about 10 mins
In 5 gal ferment bucket 2 gals cold water
Then corm flake mush
After sugar and water have ""cleared"" on the heat and almost boil
Dump that in bucket and top off
Let cool to 100
Pitch ADY and whisk throughtly till all yeasties are dissolved.
Cap and airlock
Shaazzam 7 days and ready to go.

Figured I would share my tiny bit of experience since I have gained so much knowledge from here.

I will add 1kg next time instead of 500g i read that in ujssm it uses like 3kg of corn why is it because corn has less corn flavour than cornflakes?

I believe "corn flakes" are made from malted corn.and even toasted.

"Corn Flakes Were Invented as Part of an Anti-Masturbation Crusade"
HA HA,,,
found that the corn is not malted but it does contain "barley malt flavoring",then toasted.
so maybe some DME or LME added to your recipe? maybe even toast the corn?

Difficult question. I remember drinking some white and enjoying the corn (flakes) flavour. But on some JD wood oaking chips ... should be better still.
