Mead wash, pectin & methanol

Hi forum,

I am wondering if anyone out there can tell me or give me a link preferably to information on how much pectin is in honey and/or approximation on the amount of methanol produced whilst in fermentation.

I don't believe there is pectin in honey,pectin is what the cells in fruit are held together with.
so you mite say its the protein "glue" that holds fruit together.

Thanks D for the input, I found out some more stuff, honey does contain pectin but it is basically negligible as it's like 1:1000000 parts. It's different with different honeys Heather tends to the highest but again it's minute so production of methanol and other bi-products is much less than in grain, something good to know.

Why is it good to know? You should be tossing out the foreshots anyway. Which would get rid of any if it was present?

The mead washes I've managed to not drink before stilling have all been about 25% fores and heads. The hearts and early tails combine for a really tasty drink. Matter of fact,iIt's about time to go a little further North and get a bucket or two of tallow honey.

You should try the Bochet mead brandy (lovely caramel notes) if you can get some cheap enough, is Tallow a more US honey?

Also if you want to be fancy and get proper mead yeast you can get a greater yield of hearts and a better product as a lot of the honey complexity is destroyed in fermentation with other yeasts.

To Prairiepiss; yes they are removed (unless you do things to taste like some of the old German spirits where they kept a lot in for a good stiff one). I was saying it was good to know as it is a cleaner product for that reason, as any bit of information is good to know but it's nice to know that someone cares for my safety and others on the forum so thank you .
