So, I found a new Asian market the other day and I walks in...I'm looking for Koji and rice yeast balls as I've been trying to mash rice lately.
I found a lot of good stuff, Koji spores in a tablet form, in rice balls and some other Vietnamese stuff I'm still trying to translate, but I'm sure it's yeast or spores of some kind.
But in the beverage cooler I saw clear plastic 16oz cups of semi clear to opaque white liquids...some obviously have rice yeast balls floating on top, some had a thin beige fermentation cap,...
So, when I get to the checkout, the cashier, a fine Asian 30ish looking thing says, "You know how use all this?" I reply, "Of course!" She says, "How you know?" and the discussion was on.
I asked her about the cups in the cooler and she replied that they were an assortment of fermented yogurt, rice milk and three kinds of coconut milk. All made by just dropping a rice yeast ball on the juice. Some juices are faster than others and some never fully absorb the rice yeast ball.
The clearer ones had a simple sugar syrup added to some coconut milk and reached higher alcohol content. The more opaque were higher solids, less alcohol achieved and stronger flavors.
She had a lot of unrefrigerated eggs and we had gotten into a discussion about them and the local health inspector telling her she had to refrigerate ALL eggs! But it will kill duck! Aahhhh....
I asked what the inspector thought about her fermented beverage making..."Like eggs, Bitch not know what it is!"

Thats a crazy drink, yeasty cloudy rice thing, when I was in Korea they ordered it with lunch, comes in plastic bottles, and were pouring bowls full of it. What the hell, ok, slurp. Doesnt taste like much, yeasty but definitely lubes ya up for the afternoon shift.
In theory there's no difference between theory and practice. But in practice there is.

so the story goes- ole boys had set a ambush up on a village for folks comein or goin but didn't nothing happen that nite. while they was layin there they could smell
likker bein made. that next day they went into that village an went thru it hard and found what they found but they never could find no outfit they was use to. later on they learned the wok.
