Hey guys long time no post. Been a peeping Tom on HD.org as usual. Got kind of spooked BT the Brewhaus post.
Anyway just finishing up an all grain mash tonight:
6 pounds cracked corn
4 pounds milled rye
4 pounds malted barley.
6-7 gallons of 5.2 pH balanced agua.
I brought my water up to 195 then dumped it on the corn. Stirred it every 15 minutes til it dropped to 165 then I added the rye. Kept stirring for and hour til it dropped to 154 then dumped in the barley. Been stirring that up and adding a little hot water here and there to keep it within 5 degrees up or down of 145. Don't have any alpha or gluco, just pressing my luck I guess. Gonna hold my temps at 145 or so til midnight which will be 3 hours.

I usually boil un-malted corn for 45 minutes and then let it sit insulated for another 45 minutes. You wanna keep the corn as hot as you can as long as you can to release all of the starches before adding your malt. Other than that it looks like your plan is pretty sound. Keep us posted on your results. Will you be pot stilling this?

Sorry for the double post. I didn't boil the corn this time as the false bottom for my boiler has yet to be ordered...bummer. Besides, I was unsure if the conversion on the corn was substantial enough to warrant the work and effort and possibility of creating concrete in my new stainless mash pot this time. Just curious Mitch what you think about that. Does it help to create a higher abv to the wash? I was also thinking of adding beano this time as I haven't ordered enzymes yet either. I am using a Safale US 05 ale yeast to pitch tomorrow.

Careful it will definitely scorch WITH the false bottom. The pot can't develop any convection currents (cooling the bottom of the pot, heating your corn mix). Don't ask me how I know.
You'll def want to boil the corn more.
I use a false bottom and just use flaked maize, adding to 165F water. Easier but spendier.

Thanks cu29. I inherited 50#s of organic cracked corn that I am half way thru. You said I will scorch even with a false bottom? that's weak...oh well I guess I will be using my home depot 10 gallon insulated cooler to mash in until its gone. Thanks for the input. Flaked corn sounds like the way to go
