Is this stuff sweet or dry?

So far your best bet if it's a dry spirit should be to make Vodka, add Cocoa to it and redistill making head and tails cuts like you would with anything else.

EDIT: Oh oops not reading the label properly. It looks "clear". Try doing what I said but add sugar afterwards.
The still is not a liar. Mash and ferment quality is 99.9% of your performance.

I would make vodka and infuse with raspberry and add chocolate extract.
There is another snaps on the market the same flavour and tastes the same, will try to remember the name.

Try making separate infusions with raspberries and cocoa, filter, then blend to your taste. To sweeten use simple syrup.

The raspberries will be no trouble. I haven't tried steeping cocoa yet. ***grabs cocoa jar and heads off to the shed***

EWWWW, that looks ugly. I hope you can get the stain out.

The cocoa steeped in Birdwatchers 75% ABV, had produced a beautiful red, clear liquor by the morning. I'll shake it every day for a week before I taste it.

It might loose some viscosity when it's fermented out.

Got some frozen raspberries and tossed them into enough Birdwatchers to just cover them.

I've never tasted Wild Spirit and I guess I never will. How sweet is it? I'm betting the label won't be any help for finding out the sugar content, so I'd be happy with any kind of comparison.

That's very interesting. I'm sure putting a thick mess like in your photo through my pot still with an internal element would have given me some real trouble. How did you do it?

My cocoa steeped in Birdwatchers isn't very chocolately and I am a bit disappointed. The color is a beautiful dark red, not at all brown. What color is the Wild Spirit?

I'm wondering if I should dilute the steeped cocoa and run it through my small pot still to see if the heat brings out the chocolate flavor. What do you think?

The raspberries are doing fine. Nice color and flavor, but need some sweetness.

Now that I know it's clear, I think I should put it all through my pot. Should get a chance this week.

Is there any chance that vanilla is a missing flavour?

Mixed it, stole some for comparison, or maybe coloring later, and put it though the mini-pot.

Cut it to 45%. Raspberry came through alright, but the cocoa isn't strong. I'll give it a week on the shelf before it goes in the freezer.

I'm intrigued by this- keeping the chocolate in the ferment and not just an infusion. This, despite the detonating bomb of shit-colored goodness as shown in the one pic.

Those of you playing around with this abomination, please keep us appraised of your results. I'd like to say that my wife might enjoy this, but hell, I think I would too.

I took a WPOSW and replaced at pound of sugar with three pounds of choclate syrup, its finishing its ferment now. it was an extremely active ferment and smelled just like a chocolate donut. I wanted to add more chocolate but after seeing the picture in wildernessmedic's post, I decided to scale back.

I did a chocolate mead one time and read that the longer it sat the more the chocolate flavor would blend and come through. I am wondering if the same is true here. I am going to let this chocolate wash clear really well before I run it but I am really looking forward to it.

That's my ex wifes twig arm. She's had it for a while, glad i'm not the only one who thinks it looks new still...
