hi I have been making home made spirits for a year now sugar wash style with reflux still. I want to get into make jack daniels mash. I live on the goldcoast. I have read some fourms on it but I am confused. I have a 15l American oak barrel ready to go and im looking for a simple recipe for jack daniels mash. I understand that it wont be exactly same but I want to try some out. I had a look around for dry corn can not find any. please I need help as I am keen and willing to learn. do I really need a pot still as im on a budget.
Re: jack daniel mash
Good results have been had by de-tuning an LM (reflux) to make sour mash by some members.
My 3YO UJSSM is way tastier than JD and superior to JD's top shelf (Gentleman Jack).

If you are wanting to make some JD. Just make up some UJSSM with some barley added to the grain bill. Run it off and use a lot more heads and tails then you normally would. Run it through some sugarmaple charcoal. And put it on oak.
If you just want a really good whiskey type drink. Just fallow the UJSSM recipe. Or if you want to actually mash the grains try NChooch's Carolina bourbon recipe. And make good cuts.
The secret to JD is extra heads and tails for that horrible taste and bite.

Hmmm, well if you want Jack Danials, I have a quart here that I'll likely never drink...been thinking about chucking it into my next mash batch, but hey - if you were round, I'd trade it to you for say, a couple sacks of corn or a sack of barley malt?
Me, I gave up drinking Jack Danial's about 6 months after I started the hobby.. .about the same time I found out what real whiskey tastes like. I'm just saying...
I do like their J.D. Barbecue Smoking chips...they are simple to use, clean, and readily available. And they work real well as charcoal starters when I take them out of the mason jars I store them in.

Jack Daniels is essentially oaked neutral. So make a flavorless likker, and then run it through a mountain of activated charcoal, just in case there's a molecule or 2 of flavor left, and then oak it.
I drank it for years (I can prove it with the piles of empty 1.75's that make nice coin jugs and feints/fores storage) before discovering 'real' whiskeys. Now Im just kinda burned that I got sucked in so damn long. Still like it in Jack and Coke tho. HA! whatever.

In theory there's no difference between theory and practice. But in practice there is.

If you have not seen it yet, the History Channel has a Modern marvels show on Jack Daniels whiskey, which shows the entire process.
I am sure you can see it somewhere online, but definately a good recommendation.

I second the UJSSM recipe. In fact, my latest spirit run of that recipe came out at 78% ABV. I diluted it down to 55%, and let it sit on a small amount of Jack Daniels Wood Chips (which can be purchased in most stores, sold as BBQ smoking chips). The stuff is FANTASTIC. Has that sweet flavor with a JD profile, only MUCH better!

I agree.... After drinking homemade sour mash for a few months JD now tastes like soap. How did I ever drink that stuff for so long? And best of all it is not rocket science to make your own no-cook sour mash whiskey.
