Salt rising bread

What does salt rising bread have to do with this forum? More than you might think. To make this bread you need a starter
Which is made by fermenting corn meal.

The problem I am having is I can't find corn meal that will ferment anymore.

1/2 cup cornmeal, 1 cup 120 deg F water 1 tbs sugar, NO added yeast. Let stand 1-2 days in warm location.

Bubbles and cheesy Odor will result if it works.

Why can't I find corn meal that will ferment?

What you're describing is a lacto bacteria ferment, not yeast, which is used to make alcohol. But lacto can make some great bread!
