Frozen Blueberries give up tons of color and flavor - cranberries ...... not so much on the flavor or color yet!

I just made up 2 jars 1 mixed berry and the other blueberry. The question I got is should I give the blue berries a smoosh or leave them whole?

Id cut them in half. Smooshing will make a slurry thats hard to filter out. If cut in half, the alcohol will have access to, and suck out all the flavor from inside. If left whole, the protective skin on the berry will be doing its job very fine thank you. :)

This is my opinion, based on my experience with cherries.

That's what I was thinking them damn things are tiny. Was just wondering what others did.

Ive never had problems with blueberry's whole. Only smashed them up when fermenting with them.Soaked for a while to get color and taste then remove add some sugar to berries will make some sweetest clearest syrup you could ever ask for . then just add that back to taste.
I use a pot still.Sometimes with a thumper

I use frozen blueberries from costco ... they color very quickly. when I am done the last sugar addition, I squeeze the bejezus outta the berries also.

I use frozen berries , too . Mashed up blueberries can be a pain to filter out .

I made my first 2 pts of SPD. My daughter was visiting (over 21) and she begged to take one of the pts. home saying "This is F'n DELICIOUS". She had already had a bottle and a half of champagne so she apologized for her language. Every time she said it. I think I will keep the other pint under wraps till I can get some more of this delicious red devil made up.

I have a question for all who have made this. How do you drink it? I made both the strawberry and blueberry and they are way too sweet for me to drink on the rocks. How do you all drink yours?

BTW...They look and taste fantastic, all but the syrupy sweetness. If you mix them, with what, and about what percentages do you mix it down?

The blueberry has a nice deep dark color, smells fantastic and tastes great. The strawberry has a smooth red color, smells just like fresh berries, (I used fresh berries for both of these, cut the bruises off of the strawberries along with the green, froze them, and then packed them into the jars), and it tastes fantastic, but it is too sweet as well.

I was thinking trying the strawberry with some orange juice or some orange soda. The blueberry, I haven't thought of much to mix it with, so I need some ideas.

What I do is just mix a bit of the syrup with white dog or what I have been soaking berries in . You can adjust this to taste both for proof and sweetness . No need to rigidly follow a receipt that doesn't taste good to you .

I forgot to put this in my post that is back a couple and I tried the strawberry without the lemon juice / citric acid just to see what the original post said about this having a chalky aftertaste. Wow, what a difference before and after adding the lemon juice / citric acid. (I used lemon juice). The taste didn't change at all so it's not noticeable, but the chalky aftertaste that was there before adding it does go away completely.

I put on a batch on strawberry panty dropper Monday. 150 proof in a quart jar full of strawberries.

Since I had some extra booze I also put on some muscadine panty dropper. The strawberries are nice looking but the grape stuff is beautiful. Three days and it's a deep purple. I used previously frozen grapes that I split open.

I've been looking through this post for a few days now. And just finished a run of ujsm and wanting to flavor it. So my question is can you swap strawberries for peaches while following the same procedure

I agree on being way too sweet.

Keep some of the liquor in the white, mix 1/3 each fruit liquor, white liquor and club soda/7up/sprite over rocks. CAREFUL, theres alot of booze in there! :twisted:

Next batch I'll prob just mix 50/50 the white and fruit into one big bottle. The girls will be pissed though......

Got a jar of SPD ready to go. After filtering out the strawberry bits and such and diluting with distilled water, it's some mighty tasty and pretty stuff.
I have muscadine panty dropper too. It's color is nicer but it's not as tasty. They didn't give up as much sugar syrup.

Great recipe! Added a little lemon juice. Planning on testing it's deleterious effects at a party tomorrow.

Juice of 15 lemons this should produce about a quart of juice (I cut the lemon in half and take a fork and ream the insides roughly and get every bit of juice out of it)
14 1/2 cups of water
4 1/2 cups of white granulated sugar
3 1/2 cups of 140 proof likkor
I also add the zest of one lemon to the light boil
I heat the water up to almost a boil add in zest remove, let sit for 10 minutes then add sugar. Stir and let cool. After add lemon juice and once under 85 add likkor. Of coarse adjust to taste but I have had nothing but smiles and praise from this. Besides my apple pie recipe It's the favorite.

whats the point of 1 pint of cheap vodka if you have 2 quarts of everclear in there??? Are they lookin for subtle flavor notes from cheap vodka?
