The HBF forums have many wiring diagrams.
Let's get em going here.
I adopted this from Sir PJ.
Both switches on til boiling ,then switch 2 off, PID will control boil on switch 1.

According to your diagram if any switch is Off the heating element will loose a power.
If you want to bypass SSR (and PID control) to have a full power - place switch in parallel to SSR's power contacts

Sambedded, you're keeping an eye on this, that' good. From what I 've seen so far, you know much more than me about this. I welcome your feedback.
Will it not have 120V feeding from each switch ? Both on = 240V Switch 1 on Switch 2 off= 120V , PID will control voltage on 120V leg and run element on 120V .They are on single legs to the ground, so they each have 120V to element.
