How much bakers yeast??

Post by 1965 wite »

How much bakers yeast does everybody pitch into a five gallon mash. I was thinking 4tablespoons in a yeast starter. Does that sound right???

That would be plenty depending on the recipe. My 10 gallon first generation of UJSSM was only about three packets (21 grams) and it's been running on the prodigal yeast since.

Whatcha making?

Aerate your water and get it to 40C before you add the yeast.

I use about a tablespoon of yeast and, 20 minutes later, a tablespoon of sugar and a smear of Vegemite in a one litre yeast bomb that I make at least 12 hours before pitching.

I boiled up 5 gallons water, turned off heat. Stirred in 8.5lbs corn meal then at 150F 1.5lbs 2row malted barley. Converting now. Still new to this stuff and tried about four different recipes so far. I love the smell of this ferment especially with bread yeast. Saw a guy add a few pounds of dehydrated fruit to this recipe and he said the flavors from it came thru nicely. Want to try it but dried fruit is kinda pricey.

With a little luck, that will make you some fine whiskey.

1 tablespoon is enough for 5 gallons. I use 2 tbls and ferment to 7% in 4 days. It's in machine gun mode till the end and then just stops.

Float the yeast on 6 oz. water 100*f for 15 minutes. Add 6 oz. of wash. Watch it foam up for 5 min. Stir it in.

While you're waiting for the yeast to hydrate, aerate the hell out of your mash for a couple of minutes with a paint stirrer. There is no oxygen in it after the mash.

Good luck. Sounds like you're off to a good start.

Would Marmite work? Kinda the same as Vegemite right?

So I have used flaked maize before on these Grain washes. I had no problem seperating the liquid from the grain. I tried corn meal on this one because of the price. Everything worked fine but I'm a little concerned that the corn meal was too finely ground and the solids won't settle out of it when it comes time to rack it off. Anybody tried this before??

Yeast is cheap (retalively). I add a heaping 1/4 cup to 25 gallons, more or less.

What I see around is 0.5 to 2 grams per liter. I think 1 gram per liter of wash is a good reference or starting point.

I think Customs or the FDA stops that stuff at the border.

There's that metric thing again. :silent:

Har!

1tablespoon of dry active yeast = 10 grams in the godless metric system. 5 gallons =19 liters. At 1 gram per liter that would be damn close to 2 T./5 G.

My latest ferment finished this morning. Start 14.5 bx Friday evening. Finish 6.8 bx Monday morning. = 6.8% ABV in ~ 60 hours using ~ 3T. dry yeast prepared as above. All grain mash, 5 Gal, no supliments.

These results are not applicable to sugarheads!

I grind all my grains to meal cuz I think they mash easier, but I distill on the grain. Sorry.

That's a lot of yeast for five gallons of any recipe. For a 5 gallon ferment you want about 1 billion viable yeast cells. A typical packet of yeast from a brew shop has 5 to 7 grams (1 1/2 teaspoons) of yeast which is 1 to 1.2 billion cells. So 4 Tablespoons is more than you need.

I was going by the sweet feed recipe suggested amount of bakers yeast of 8 tablespoons. I thought it was too much so I figured maybe cut it in half.

I cook the corn, mash, ferment, and distill in my potstill boiler. Makes cleanup easier. It's not possible with most rigs because the grains burn or scortch in the boiler and ruin the batch. Mine heats in a water bath under vacuum. I can distill bark-o-mulch.
