I am seriously considering making the switch to electric, as I read all the related threads a question came to me. Why must we use an SSR or an SCR controller? Why can I not use a water heater thermostat? I recently replaced one, they aren't that expensive and the wiring was fairly straight forward.

If I am way off base, let me know.

For my pot still I don't use a controller at all.

One side 220V - can be plugged into 110 V

Other side 110V no controllers

Run by touch, feel, smell, taste
