Thought I would relate an experience this past month. We had family for a weekend and we (as we always do) sampled of my recent production for feedback, etc. About a week later I went to the shelf for a dram and found one of my earliest bourbons which had been left uncapped. Fearing the worst, I tried a sip and was surprised at how much the young, sharp feel had subsided. I guess this is an airing, just not on purpose. How long is too long for airing out?

Some folks don't like to loose all of that sharp quality. Makes em feel they get more bang.

I have to say I like it. I might not like it with a rye whiskey but for the bourbon it is okay. I may try an experiment with one capped and one uncapped for 1 week and test it out on neighbors.

I'm a fan of airing out shine.
On the shelf are several gallon jugs with cotton cloth stuck in the top of them
