My peaches are supposed to be locked away where I'm not to be sniffin around, but the latch ain't that good and I do get an occasional snifter.

NZ manuka honey version of Glayva this evening. Very nice.

This WEEKEND, I did the strip run on my Rad's all bran; pitched a honey based wash back on top of the all bran trub for grins and giggles;
Watched my pantry droppers melt sugar;
And sacrificed my worm to make my first Liebig! :)
All in all it was a good wknd I'd say! ;)

Ran Gen 1 of sweet feed in pot still mode then used the hot backset for the reload for Gen 2.

Currently into my 3rd pint jar of TPW trying a strip run not sure how far into it I'll go yet or if I want to run it a 2nd time yet?

will see how it goes tomorrow still learning it :p

Currently working on a rolled corn and barely AG third generation backset.. 10 gallons bubbling nicely this morning. Will let it work off then give it a run.

Actually ran my first BW last night. Been wanting to make some neutral for the ole lady. She likes coconut rum, so i bought a bottle of essence to try out with it.

Had a bear knock over a garbage can I was using for grain storage and run off with a 50 pound bag of cracked corn. He (I assume it was a he... could have been a she though) also spilled out a bag of whole oats. So I'm currently malting the oats I was able to pick up off the ground. We'll see how it goes.

Used my neutral to make 4 gallons of Apple Pie.
Boiled up my regular, 14 gallons of Gerber wash.
It'll cool all night in the buckets and get yeast in the morning.

Another batch of wheat Bourbon. 2/3 corn 1/3 malted red wheat. One more batch and I will have enuf for a spirit run.
welcome aboard some of us are ornery old coots but if you do a lot of
reading and don't ask stupid questions you'll be alright most are
big help

Got three litres of Birwatchers and macerating orange, juniper and coriander as per Odin's gin. I'll give it a few days and then run it. Going to take a bottle up to my Aunt, Uncle and cousins who I haven't seen for a while, hope they'll be pleasantly surprised.

Finally ran 8 gallons of my rolled corn project harvesting 64 ozs @ 100 proof putting 1 jar up on mesquite and 1 on apricot.

Ran my sweetfeed first sour generation today after adding a gallon of sweet strip from the first ferment.
Smells purty good!

I'm still tweaking it, but this is where I'm up to...

660ml Joe's Ancient Orange Mead.
1l Oaked aged whiskey @ 62.5%. Nuked will do if you're in a hurry.
360ml Simple syrup

Glayva has more citrus than this method. This can probably be fixed by steeping some zest in the whiskey for a week.
I suspect Glayva is made with clover honey.
Sweetening with honey didn't work for me. Very difficult to clear and the honey flavour too strong, even more so because it was dark bush honey.

made some coffee rum liqueur...just a neutral spirit, sugar, glucose, water with added flavour by "essencia"...real nice!

I did a rerun of my sugar wash, messed up on dilute and it had an odd flavor i thought.... But i reran it, tasted the same but less harsh. I was able to get my cuts better this time around. Smaller containers and smell, taste, touch were great to see the difference this time around. Only 3rd time i have used my reflux still so its a learning process. Ended up with 1 gallon of 120 proof after mixing it together and a half gallon (2qts) of 100 Proof. First quart after heads was running around 170 proof. Pretty damn happy to be learning my still and this process a bit better. Need some more practice but I think its the fun of this hobby.

I ordered some different yeast yesterday so i can do away with this turbo crap i have. From what i have been reading on the forums here the taste will be much better. Cant wait to give it a try. Probably 2 weeks before I will be able to see that product if not longer. I got another 12 gallons of sweet feed mash to run next weekend when its done fermenting.

2nd generation SF ferment.
Essentially an 8 gallon ferment with 12# sugar, 2 gallons of backset and a sprinkle of oyster shell for pH control. I've taken to arbitrarily replacing 8 cups of grain per ferment to keep the nutes up and some molasses for flavor. It worked well for the UJSSM.
Got six sticks of toasted oak all charred and in the bottle with a coffee filter plug in the jug neck as an offering for the angels. :thumbup:

5 liters of 50% strong walnut brandy ... macerating as we speak. Should be done in about 2 weeks. Well, that's when maceration is done. After that ... a few months of ageing ...

Just started the first "coconut brandy" ferment. Some 50 liters. Target abv is 8%. Coconut flakes smell & taste wonderful, coconut milk not so much.

Runnin 12gal of my signature corn as we speak ..Ran a bunch of peach over the last couple months and run plum out of corn!! Holidays are coming, I had to get on the stick.

Brand new UJ ferment. Will strip this when it's done, reuse 25% backset and keep going. Love my corn! :)

Used an Irish Cream recipe, but substituted peach schnapps. Very nice.
