Newly registered and eager to participate

Post by Staystill »

My name is Staystill. I enjoy good bourbon and fruit brandies. Interested in learning more about the craft of distilling . Familiar with pot and reflux distillers. And learned a little about the differences in certain yeast cultures.
My goal is to become a licensed distiller in one of the colonial control states . I look for to participating in discussions . I've been impressed with the helpful knowledge on this site. Uncle Jesses sour mash is amazing and was a wonderful start.
Thanks for having me as a member

Welcome to HD!!
Becoming a licensed distiller is a lofty goal ..One that requires alot of energy and resources ..
What kind of equipment do you plan on using?
Do you have any exclusive, refined, tried and tested recipes to speak of ..
Alot of intros mention the start of a new distillery only to not follow through due to lack of knowledge or some other reason ..
Learn, research, study and create your own recipe that will subsidies your new distillery or make your own footprint in the distillery world ..First, you have to have a still ..Do you?..Be Vigilant.
Good Luck and Keep us posted .

Basically pot still for grain whiskeys, reflux column for white dog corn, rum and some brandies.
My wine recipes are old family hand me downs....particularly apple and peach. I would like to be the first legal distiller in our family tree. ;-))
Experimented with a lot of different yeasts. so far so good. But have got a lot to learn.
Its one thing making good stuff with a dinky 10 gallon pot,,,,quite another stepping up to a 300 gallon distiller with large mash tuns and fermenting talks.
I was naive to think there was a lesser way to get licensed without having to build a turn key distillery to prove my bonafides to the govt. Fat chance of clamming my garage as ground zero for ops.
I am considering attending one of the craft distilling workshops....heard good things about ADI and Moonshine University.
any comments or suggestions are certainly welcome

Sounds like a good plan ..You still have a Long way to go ..
May want to keep runnin that 10gal rig in case things don't work out ..
That way you won't go thirsty ..IMO
Keep us posted on the Craft Distillers forum. If you haven't refined your recipes, you may want to travel the Recipes forum ..There's alot of competition out there ..
If I was gonna go start a distillery, I'd follow woodshed's post history and maybe even jump a plane and visit his distillery...Not sure about that University you're talking about, may want to save your money ..Donate Here! ...You'll probably be using HD to help make your living down the road (if your plans work out)..Good Luck ...Definitely keep us all posted.

Thanks Moonbreath.

You are correct ....got a long way to go and a whole bunch to learn. I know enough to be dangerous.

It's a steep investment just to not have to look over your shoulder. Assuming the results are well received, the payoff may be quicker than some business forays.

IMHO, it's the greatest hobby in the world. Too bad it's illegal.

Yes, its very sad that its illegal ..To me, hobbies come and go ..I've always considered it a Craft, trying to make world class likker every time ..With the exception of so very few, All licensed distillers started with making 'illegal' likker ..Most also come from a family full of 'illegal' moonshiners ..Such as you stated was the case with your family ..
Some folks don't want to be Gooberment bound and just want to make a little world-class likker to drink with their closest ..Such is my case ..Show us all of your equipment, your new building, and your finished product ..Then help others that want to get licensed by posting everything here on HD ..
If your product ever makes it to Ky, I will give it a try.
Good Luck ..Everyone here wants to see you succeed ..Its hard work and Expensive.
But worth it if successful.
