One-Way Valve or Holes in Jar Lid

Post by squaremile »

Hello, I'm new to the spirit aging game, and am coming over from beer and coffee geek circles. I am going to start with doing some jar aging, and am aware from reading the forum that jars need to be regularly opened to allow some of the unwanted compounds to escape, which is part of the aging process. So I'm wondering if anyone has:

a) experimented with putting a one-way valve into a jar lid for this purpose (see this page for an example from coffee geeks: http://myweb.tiscali.co.uk/coffeetime/_sgg/m2m6s1_1.htm" onclick="window.open(this.href);return false;" rel="nofollow)

b) whether a one-way valve would be a good idea since it would also prevent oxygen from getting into the jar

c) if people have put small holes in a jar lid for the same purpose

d) any advice on long term (year-years) jar aging.

Thanks in advance, and I have searched extensively for this topic in the archives, and have not found anything, so if there is something, please hook me up too.

Thanks!

Years and years of aging in jars? Thought of buying a barrel?
A proper intro would be nice.

Done on the intro. My understanding from reading these forums is that the angels share from smaller barrels is enormous even after 1yr. So I thought about that first, but held off due to that info.

Put 10 gallons in a barrel, assuming 2%/yr, after a year you have 9.8 gal. After 5 yr, 9 gal. After 10 yr, 8.2 gal. It varys a lot. If I fill a 3 gal barrel, a quart of the stuff that's in the barrel gets put up to top it off.
Dry storage is supposed to evaporate the water more than the alcohol (increasing the abv), humid storage the opposite. Couldn't say from personal experience, but it makes sense from a partial pressure standpoint.
Longest I've made it before bottling was 2 years and that was tough waiting but good whiskey.

Ah yeah when I say smaller barrels I was referring more to 2L-5L, not 10g. That's a bit past my level at the moment

Meh. I use cork stoppers in 1 gallon apple juice bottles. It's rare anything I make lasts more than 3 months anyway. That's why I make sure it's good right off the bat.
