How long in a 3 gallon barrel

I know there are a lot of variables when it comes to aging in barrels of different sizes. In your experience how long generally have you left your product in a three gallon sized barrel without over oaking it? Just trying to get an idea for a time frame. I plan on filling it up with 110-120 proof. I've tried the higher proof oaking (130-140 ) and felt I was getting something like a strong oak tea.
