Aging White Before Oaking

Post by The flint stones »

Im just curious if there is any benefit in aging white for a certain amount of time before putting on oak? Asking because I love UJSSM but not sure if I like sweet feed yet. Not really fond of it white out of the still and have some aging on oak and almost a gallon white from last week. I do three strip runs from 3 five gallon mash's, then spirit run.
thanks

Im not much of a fan of anything off the still.

Not sure how to answer your question... White liquor goes through flavor changes both when airing and in a sealed container. I have recently located a sealed bottle of vodka that I disliked. Several months later its pretty damn good.

Not being a fan of sweet feed yet it just got me thinking. I always air out for two days then make cuts "probably my problem", still having hard time with heads so when ABV starts to drop is where I start. Then put in jars for aging and thought maybe age a while white then put on oak. I have never kept any white always oaked mine.

Your problem may be that your not oaking long enough. Please describe your oaking procedure. I recommend trying it the T-Pee way. (Do a search)

Do you deviate from the steps outlined in the guide to making cuts for novices?

My original question was just a basic one about aging white before putting on oak, if it made any difference? "it was not very clear in my post". I didn't mean to imply I didn't like what I have produced so far until the sweet feed. I guess its just different, can't put my finger on it. I will see how I like it after aging a while but after this next batch probably going back to UJ. I do age basicaly the t-pee way but I use JD barrel blocks split, charred, rinsed and put up at 55% until I get the flavor I like.
thank bear for the advise.

Sweet feed is a little difference and improves considerably with time, least to my taste it does. I've never tried aging white and then oaking. Try it! Aged white and Oakes sweet feed is pretty darn tasty.
No, officer, I wasn't distilling alcohol! It was probably that guy!

It's hard to say if there is any real difference, unless you do both and see what happens.

I've had aged white sitting aside for no real reason and used it instead of fresh off the still.
As others have said aged white is always nicer (6 -12 months).
As "that guy" says why not try it?

Many would be interested to see your results.
Most probably haven't tried the experiment because if the time involved.
