White Labs WLP070 Bourbon Yeast

Has anyone tried this strain of yeast? I've been trying to find some solid info online but haven't come up with much, and anything I have come up with is beer brewers looking for a little higher abv. Here's White Labs' description:

From a tradtional distillery in the heart of Bourbon country, this strain produces a carmel, malty character with balanced ester profile. Suitable for Bourbon or other American Whiskey with barley, rye, or corn as the base grain. Used in high-gravity beers.

Attenuation
75-80%

Flocculation
Medium

Optimum Ferment Temp.
72-77°F (22-25°C)

Alcohol Tolerance
High


Comes in a small vial but I'd harvest a bunch of small jars from the first batch if I were to try it out. Maybe I will once I'm up and running, sounds like it would be well suited for a sweetfeed recipe. Anyone else try it or have anything to add?

it cought my eye a wee while ago. ive not used it as yet, it aint cheap. might give it a go on my next attempt at ag.

I would make a large starter with some DME and then save a quart for future starters. This way you will run less of a chance of a infected or mutated strain.

+1 if i am to buy expencive yeast i will 100% be making starters from it. whats the point in buying yeats when you can farm em your self. :lol:

Yeah I'd make a 5 gallon starter with DME and then bottle up the yeast in 100ml jars. One vial of yeast is all you need. You can make 100's of gallons of wash with one vial if you do some research, I don't think that's expensive at all if it improves your product. I've used a bunch of other liquid yeasts from White Labs in beer brewing, and I have to say it was a significant improvement over dry yeasts.

It's about $12 a pop over here, wouldn't call that cheap. If you start off a yeast bank(what I'm planning to start) it's not to bad. I haven't used any yet but the must be a reason that they are popular. Also
I'm reading the book the guy who started the company wrote. Really good info.

anyone thinking of starting a yeast bank, I highly recommend this starter kit. Its how I started. With a bit of research you can do it slightly cheaper but this gives you everything. Store your vials in a small cooler in the freezer to minimize temp changes.

$12 ain't cheap I get what your saying. Even in the extract kits I used to make, changing from the supplied dry yeast to White Labs liquid yeasts was a big improvement. Enough for the guy selling the extract kits to nag me for my "recipe" lol

If you use a kit like bellybuster linked to and invest in a stirplate you could easily make 50 pure vials of yeast from the original with one starter. Use each of your vials for 10-12 generations and you've got enough yeast for 500+ batches of wash.

Haha good advice. As I've stated before when I'm ready I will be contacting LG. He Is scotland based and I could potentially contact him over the phone who better to ask about yeast than a microbiologist that has found a living in working with brewers and distilleries advising them on yeast. Shame he dont drink or distill as I think he could produce some jaw dropping results in his lab

i have just listend to a beersmith podcast with the founder of white labs it was quite interesting.
