Found this over in the "Shared Recipes" forum - http://homedistiller.org/forum/viewtopi ... 58&t=51324 . Sounds like it might be something close to what's being talked about here. I thought it was kind of interesting that it doesn't use the typical cider/juice mix. Haven't tried to make it (no neutral), so I don't know if it would be clear. It might be at least a good basis for what you shoot the thumper with - blended granny smith and cinnamon sticks.

Another thought - Do an infusion as described above (without the sugar), then mix as a cocktail using something like Grenadine or just a simple syrup.

what are most using for this recipe. ive never had apple pie but so im thinking about what to use. im thinking a corn and barley would be nice.

Ok I am assuming you have a port set up on your thumper to shoot thru If not you will need one.
This is what I would do,take 2 quarts apple juice pour in a pan add apple pie spice and some drops
of vanilla.Heat it up and mix don't boil get it around 180F KEEP IT THERE.Charge your thumper
with 1 1/2 quart apple juice.Charge your boiler with what ever your gonna use get er fired up and runnin.
Collect your fores and heads the best you can, then back your heat way down then shoot the 2 quarts that
are spiced .Kick the heat back up but run slow.Then come back and tell us how she turned out for ya.

Have a uj ferment that will be ready to strip this weekend. Planning on starting out slow to get rid of heads the whale the heat to it and strip it out. The charge the boiler with the strip and put Apple juice and the spices in the thump. That is the plan anywho.

No idea what flavours gonna pull though with a thumper but with vapour infusion what the Carter head setups have over a vapour ball is an easy way to bypass the fores and heads vapour before running through the spices or botanicals. Your faints will rob a lot of flavour ,now if you could make a bypass for tje thump box ya might be able to run it a similar way without stopping and swapping

Just charged the boiler with 2x ran mainly cob uj that was oaked. Total charge 2 gallons of 70% 2x + 4 gallons water. It was a oops on the head cut. The second pass collection has a nice vanilla and light caramel taste to it.
Thumper is charged with 3 cans frozen apple juice concentrate, 1/4 cup apple pie spice and an extra 4 tablespoons Cinnamon made up to 1 gallon with water. Smells that good that Mrs Jed says she might try the final product and she don't drink.
Mainly blabbing to keep record. I'll let the attendees at jedfest give verdict.
Edited to add they were 12 oz cans.

I got 2 gallons of about 70% back. I believe it could use more apple, spices seem about right. Needs a bit to rest.
I am sipping a glass now. I poured a bout an oz of uncut and 3 oz water with a pouch of suger added (wanted Mrs Jed to try it and she don't drink much). Seems a little lite on apple but I'll let it rest till jedfest and get more opinions.

Its been about a week now. Spices seam about right but seems lite on apple. Sipping on ice at 45%. Has a great apple pie nose

I got an idea on how to try this. I'm going to macerate my feints jugs for a while with cinnamon and some clove then charge the boiler with just that. Then run cider in the thump. Never did come up with a good way to shoot it.
You guys fermenting the cider first or just using it as is? If I understand correctly I can buy a jug of cider from the store and just pitch some yeast to make it "hard" is that correct or am I way off base here?

For mine I used 2x ran uj hearts in the boiler and charged the thump with apple juice concentrate and the spices. Seemed to work good just gotta play with spices.

this is something ive been very interested in doing.
just got my liquid enzymes to day so i think my all corn/booners will be my base to my thumper infusions.
i look forward to charging the thumper with peaches to see if i can replicate some 3rd generation awesome peach shine out of Virginia ive had a few times. wouldnt be suprised if anyone in the area has sampled the same peach shine.

I was thinking I'd use feints just because they sit a while accumulating anyways and that would give ample time to macerate. Jedneck do you have any thoughts in getting more Apple to carry over? I prefer a strong apple flavor in my apple pie.

I believe I needed more apple juice concentrate in the thump. I only used 3 twelve oz cans.

im in the north east. i know a guy who spent a bunch of years down there , he claims to knows the old man and his son whos now taken over running and sometimes will travel back up with a few gallons . that peach shine was my first encounter with moonshine. he was giving out samples to a few folks and and i figured i would give a try as well. honestly damn good. it wasnt really what got me into this hobby but i would love to replicate it . from what he said its run three times and each time the thumper is packed with peaches, or something along those lines. who knows
so a nice clean corn likker converted with enzymes then rerun a couple time with a packed thumper of peaches would make a fine clear peach shine . so i assume.

i dont have access to peaches like the folks in the south. wish i did . easier to maybe shoot the thumper with a peach puree or just do a double run with a thumper packed with peaches crushed up
im assuming the peach shine was more of a UJ type sugar wash. again got no idea.

I've heard talk of all this from several places and those folks were poor judges of character as well as drink . Lifelong friend of my wife ,and a welcome guest here 24/7 , PMed her just yesterday about some of the off shelf shit in liquor stores in northern Michigan . Affirmed that what we had here was MUCH better .
