Corn Whisky yeast problem

I am new to all this but I have built a sill and I have a bit of a query regarding yeast. I am planning on trying a simple corn mash recipe using 10 lbs of kernel corn and 5 gallons of water. I have found several recipes that say that a cup (250g) of champagne yeast should be added to this mix whilst others say refer to yeast manufacturer's instructions. The yeast I intend buying (http://www.amazon.co.uk/Wine-Making-VinClasse" onclick="window.open(this.href);return false;" rel="nofollow®-Champagne-Sachet/dp/B0036BEYSO) says 5g are sufficient for 5 gallons.

Which is correct please?

You should check out tried and true for recipes, are you cooking the corn? Is it a true mash? What are you using for an enzyme to convert the starch to sugars? This is why we say to do a tried and true recipe first. Just putting 10# of corn in 5 gals of water with yeast won't do anything. But, to answer your question 1 packet should be enough for 5 gals.

You can over pitch the yeast to get a quicker start. It will also help to prevent an infection. Good advice from Bigbob to check out the Tried and True Recipes section. An all grain (AG) mash can be a big challenge for someone starting out. It's usually best to get a little practice first with a good sugarhead. The "Uncle Jesse's Simple Sour Mash" (UJSSM) is a popular recipe and a good start for a beginner.

If its just kernel corn from the field you wont make anything. But idk..maybe you malted the corn but now you will be lacking enzymes for conversions. You would be better off starting out with cornmeal and sugar recipe to get your feet wet. Head to grocery store and pick up plain old bakers bread yeast. Gotta crawl before ya can walk...gotta walk before ya can run.

I'll second the vote for bakers yeast. The cheapest place is Costo or Sams Club $5 for 2 pounds

+1 on Costco. Red star, 2lbs +\- $5, shit never seems to go bad. I had a bag sitting at a friends for 2 years unsealed, sitting in his garage. Been using it just fine for my last couple runs.
