cool temp yeast
I've only ever used bakers yeast .its cooling off here in east texas60 deg f for low temps80s for high temps.im still in temp range for bakers yeast.
my question is- what is a yeast type that works between high 50s deg f and low 70s deg f. I know some beers are fermented at lower temps and these would be good but what isa name to order.

EC1118 is one, sure there are others.

Beer brewers lager yeasts will work at those temperatures. They'll ferment very clean too. But they're much slower to flocculate than the ale yeasts are.
Incidently, when I use Lalvin EC-1118 champagne yeast, it slows and stops below 70*F. I like to keep it around 74*F so it works a little faster and goes terminal. The upper 50's may not work with ale yeasts at all.

Thought that was more of a fruit type yeast? Not that I have a clue...lol. I will be making mostly sugarhead recipes. I will read up on 1118 though,thank you for suggesting a starting point.

Maybe something like wyeast California lager2112 ? Any opinions?

Plus, I've read that it is very close to the Safale strain that Corene suggested too.

Thanks everyone! I appreciate y'all's input.believe in gonna order the lager yeast and give it a go. I'll let everyone know how it goes. Just thinking that the right yeast may stop me from fighting w/ferment temps so much.

I don't think you really need to worry about the low temp as the yeast will create some heat of they're own. I think an ale yeast is the way to go. The aforementioned US-05(or the White Labs version WLP-001) is a good one. In beer brewing it's typical to cool a ferment for the first few days anyway as the yeast create enough heat to stress itself. If you really want to do a lager type ferment WLP 862 has a huge temp range and can ferment at lager temps and ale temps
