You worry too much. Mix up your wash and pitch the yeast. And then add a handfull of the crushed oyster shells. They'll balance the dropping pH of the ferment.

If you need to worry about something, I'd focus on yeast health and the proper nutrients.

Bah! You're prolly right about the worrying too much. When something is new to me I tend to walk through the procedure verbatim until comfortable with the process then start cheating after that. Reckon I'll eventually be mashing like I do my BBQ; footloose and from the hip. Until then though I'm still learning the process so when something goes south, I'll likely know what the cause was and hopefully learn not to do that again :sarcasm:
