Ok, that topic isn't real clear. So here is what is going on and what I would love some insight into.
I was given some very sulfury pear cider from year. I double distilled it May and it has been wonderful. Made sure the cuts were very clear. Foreshots removed in both runs and a hefty heads cut in the spirit run. It's been on a spiral of medium charred oak.
That all said, it has been one of my favorite drinks......until.....I pulled it out on Thanksgiving to share. It is NOT the drink I have been drinking. This lovely silky pear brandy now has this huge solvent nose. Iso-propyl like.
Any thoughts where is came from? And what to do with it other than tossing it into my heads collection to re-distill?

I wouldn't run it with more heads if you want to clean it. What I'd do is run it by itself, or another brandy. Probably put a teaspoon of sodium carbonate in it when you boil it. Maybe I should have simply said oaked, not aged. I'm in no rush at all. It tasted wonderful straight from the still.NZChris wrote:May?

My query is stems from the change from good with no solvent nose to bad with a solvent nose. I've never seen or heard of that happening. Wondering if others have.
