Proofing Honey Shine???

I have made a real good run of honey Shine and it measures 145 proof. What I need to know is what is the proof that I need to bring it to and what's the best way to proof it? I use artesian well water for most everything else but I've never heard how or what to proof it with or what to bring it down to.

Are you aging it or drinking white?

I like 90-105 proof for drinking but every ferment is different.

Aging on oak should be 60 to 65% abv then proof to drinking strength after aged.

I use r/o water.


Some prefer 62.5 abv for aging.

I like 100-110 proof,but I pot an ice cube in a glass and sip it.

I think I'm gonna age it in a oak barrel for about a year. What's best for it to be doing that?

120-130 proof is pretty standard.ageing on cherry and apple wood can be done at a bit lower proof(110ish). The honey I've been using is tree honey from an apple orchard so I've been ageing on apple wood. Apple wood gives a light color and gives a sweet very lightly smokey flavor with just a hint of apple and apple blossom. No telling how much of what is due to the high ester D-47 yeast....
