Rye funky smell

Post by CRACKERCREEK »

Hello All
I am doing up a corn rye whisky. I had hopes of the whisky loosing a funky smell I have distilled 2 times an the resulting sprit run netted about 6 gallons of good good, so I thought. It sort of has a funky smell like sweaty feet or butt "ha ha ha". I have this sitting on oak now at roughly 115P. Is there anything I can do to remove the stink it drinks nice but has a funk on the nose and leaves a funk in the glass.
Thanks

Too deep into tails is my guess. Let it age for a few months to a year. What was your grain bill?

If I'm ageing on oak I run into the tails to the point where it's a little funky. Just to the point where it would be unacceptable to drink white. Then I put it down for a little less then a year on a barrel. Makeing your cuts to clean on a barrel aged product gives you a kinda lack luster whisky. So you might be just right put it in a barrel and check it once a week, when it's good dump it into bottles.
