jamacian jerk (chicken) marinade

- Location: drive to the sticks, hang a right past the sticks amd go a couple more miles.
jamacian jerk (chicken) marinade
2 jalepeno chiles (adjust for heat)
1 bunch green onions
3 cloves garlic peeled
1 tablespoon ginger (grated or ground)
1 teaspoon thyme
2 teaspoons ground allspice
3 tablespoons canola oil (i use what ever is in the cabinet)
3 tablespoons soy sauce
juice of 3 limes
2 tablespoons brown sugar
2 tablespoons salt
1 cup water
blend all ingredieants in blender
pour over chicken and refriderate 2 hours.
grill as you normally do
best on thighs or leg quarters. can also use on shrimp or fish. marinade for 30 min instead of 2 hours

2 aint very hot, little heat but good flavour

Habanero peppers (Scotch bonnet) are the way to go for jerk chicken. Awesome flavor but for those that don't want their face burned off drink some whole milk to dissipate the heat. DO NOT get your fingers anywhere near eyes or face.
Eating a slice or two of American cheese puts the fire out almost instantly .

Thanks for posting, I do love a good jerk marinade.
I used to use a brand I found by "Mrs. Dog's" and it was very good, but I'd love to try this homebrew recipe.
I might try the habaneros, I don't necessarily need all that heat, but I really like their flavor.

just a tease of what im cookin. its a 17lb feeder pig with a turkey breast and 2 turkey leg quarters inside it. been cookin for 5 hours still got 2 more at least
