Last weekend we tried our very first distillation, but we got a very yeasty smell. Let's show you what we did:
We started with turboyeast (alcotec 24) and brown sugar. The store lady told us to let it sit for a few days to clear after the yeasting is done. So we let it rest for 1 week. In our final mash, a thick layer formed at the bottom, but the brown water wasn't clear. We thought this was because we used brown sugar instead of white, so we wouldn't get a clear liquid. We tasted no sugar in our wash (but very much the yeast), and assumed all the sugar was converted into alcohol so we could start distilling. We siphoned it into our pot still, and started the first distillation. The alcohol coming out of our still had a very strong yeasty smell, and even after a second distillation that smell remained in our final alcohol. The smell is not that bad as rotten eggs or vinegar, but it isn't very pleasing.
So now my question, what went wrong? I'm assuming we didn't wait long enough to clear our wash? I just found out a clearing agent should be used with alcotec 24. But when do you know the clearing is settled with brown sugar? Is the wash then transparent with a brownish color?
Is there any way we can now get rid of the smell in the final alcohol? Carbon filtering didn't do much.
