It's about time I said hello!

Hi all,
I actually joined 2 1/2 years ago and have been reading the site for years so I figured I should probably say hello!
I live in North America, but I Dream of distilling unencumbered like they can in New Zealand, hence the username.

I don't know of anyone with a collection of vodka larger than mine, but I admit I've recently become a fan of Islay scotch.
My interest in the hobby is about making something from the ground up and experimenting.
Over the past 3 years, my batches have been made with a small, 1 gallon air still, because, like I said, I'm just fooling around.
Say, did you know you can't make vodka in a pot still? (Joking, of course!)
So last week I ordered a new 25-Liter Turbo 500 with the stainless reflux tower, plus an extra copper alembic tower.
My hope is to actually make vodka rather than a myriad of variations of white whiskey.
First run will be 10 lbs of crushed malted wheat, 2 TBSP lemon juice, EC-1118 yeast, and no sugar.
1st pass through the alembic, 2nd pass through the reflux.

I'd also like to try a fruit-only, no sugar, brandy/palinka/slivovitz style eventually, but man-o-man it sure is hard to find a detailed recipe.
I'll probably have to ask a question or two at some point but I admit the welcome letter makes me hesitant to post.
I'm no expert, I don't pretend to be.
I'm small-time, ...maybe one batch a month if I'm lucky.
I don't have all the big, fancy, home-made gear, ...I bought mine off the shelf.
Call me a cheater, but I have no interest in open flames, welding or building a still.
I'm just a fan, and an experimenter who sometimes needs very explicit directions.

Welcome here yeah those stills are very common in NZ, Oz and the UK, they are not amazing, bloody expensive and have some synthetic parts that will likely fail if not modified but they will do the trick.

I don't believe it's a fault that you don't build your own stuff... I am curious to see what recipes you come up with.
