safbrew wb-06 for whiskey?
Has anyone used this yeast to make bourbon? In theory, it produces a large amount of esters.

Since it is an ale yeast suited for European wheat beers, it will be estery with some phenols (spiciness). How well that will fit in as a "bourbon" is to be determined. If you feel adventurous, try it and let us know your outcome. Probably not the yeast of my choice for a bourbon, but heck...YMMV.

If I were to guess (which is exactly what I'm doing) based on previous experience with german wheat beer yeasts, I'd say although it will work fine, it won't really lend itself nicely to a bourbon. But it could be interesting, given enough time to age.

I have used it for Weizen.
It's the only good dry yeast for Weizen on the market. Gives the distinct clove and banana taste if you perform the fermentation at the correct temperature.
