Hi All,

I have a very nice golden rum that's aged 6 months now in a 50liter port barrel.

I want to do some Spiced Rum next.
Now I have found a lot of different recipes for the rums, but want to hear from a couple of people what your experience have been.

I am looking at a couple of different methods and don't know which to try first:

1. Infusing newly distilled rum with spiced, and barrel Ageing.
2. Infusing barrel aged rum with spices.
3. Distill neutral alcohol with spices similiar to the ginning method, then blend with aged rum.
4. Distill white rum with spices similiar to the ginning method, then blend with aged rum.

It seems most internet recipes are for methods 1 and 2. Are there any of you that have tried method 3 or 4, what has your product been like?

Any recipe that you can highly recommend?
