20 year bourbon aging

Post by Red Rum »

Hey Friends,
I have a son due any day now and would like to run a bourbon wash and barrell for 21 years to celebrate with him on his birthday. I have a 15 gal white oak already but nervous that amount of time will cause over oaking.

Any techniques to accomplish a great product that don't involve purchasing full sized barrels?

This is a rough example of what happens over a time period that is similar to the one your wanting to oak for. The lower the level in the barrel gets the faster the angels drink. Barrel size and climate will also have an effect on how much booze you have left in 21 years.
Just another thing to think about.

I can only suggest that you oak and age for a period of time that gives you a product you like , then bottle and store for the remainder of the 21 years.

Thanks all, someone out there may know but are the single cask 20+ years kept in the same barrel for the duration? I always assumed so but the amount of evaporation, leaking, tannins, etc. have me second guessing.

The effects on aging and wood type and angels share over the years.
