Winter wheat

Hey all

I have a farmers field next door that is full of winter wheat. Are there any good recipes for an all wheat mash? I am curious to know if it would be something like vodka if done right.

that's what i use for vodka and people say it the best damn vodka they ever had.

+1. Wheat makes a damned good Vodka if you don't still ALL of the flavor out of it. It lends itself to a good neutral, also.

I like wheat :thumbup:
It's one of the easiest grains to malt, and has high diastic power.

Am I correct in assuming that to fully utilize the diastic enzymes present in the wheat I should first malt it? Or can I simply roll it then gelatinize it?

go the first way or you'll be making porridge not mash. unless of course you are using enzymes for the conversion.

Do some malting, why not?

Yes rye has diastatic powers IF you malt it, otherwise not.

Mind you wheaten porridge from cracked grain is great.

Used to have it when I worked on the farm for my cousin.

Now he could squeeze a shilling!

We hadn't invented dollars then...
