Ultrasound ageing?

Post by NZBoka701 »

Ok, so I think we can all agree that there is no substitute to normal ageing, however I have been reading a bit about ultrasound ageing. Supposedly the ultrasonic sound waves increase the speed of ageing to create a whisky for example with the same chemical composition and flavour profile of a 10 year aged spirit. I fancy giving this a go seeing as I already own an ultrasonic cleaner so putting spirit in jars into the water of an ultrasonic tank seems like a no loss risk to take. Has anyone read about this or given it a go, I have to do more research to work out an exact process but this seems worth a go! Has anyone heard of this before?

Research this forum. There are some threads on it. I basically invented this approach to speed up my recipe development. Or re-invented. Because when I tried to patent it, it turned out it had already been done in the 30's and 50's. No need to put the bottle in water. Just put the drink in the ultrasonic machine ...

And if ya play some blue grass real loud right next to it it will feel like it's even older. Or was that heavy metal, I forget.

Yes and no. Music does not work realistically even though it causes vibrations. You need 5 watts per liter to make any changes to the molecular composition of any drink. Ultrasonic can do that, music not - at least not on a professional scale. Even one barrel would need a kW of music.

The ultrasonic machines that can be used in product development or to age out small badges of a few liters help recombine molecules by vibration and heat-up.

Maybe I will give it a go, I was looking for something that gives a better taste fast as opposed to waiting months or years! I typed in "Ultrasound" to the search bar before and nothing came up... Weird!

It will help you get to 70% of the aging process and mellow things out.

Just placing bottles inside the filled ultrasonic cleaner works then? Mine is 30L so should take a fair few bottles. Do you place them in the basket or strait onto the bottom? How long do you run it for?

Sorry for all the questions. Asking someone for their opinion makes a lot more sense than getting lost in year old posts! :D

+1 on what Odin says, he was probably the first and I was right behind him after visiting a distillery that was doing something similar. Another avenue to read up on is the following thread on microwaving.
