Now I'm going to do approximately a triple batch of HBB in it for a total volume of 20 gallons since the still is 26.
- 20 lbs of corn meal
2 lbs of honey malt
4 lbs of pale malt
4 lbs of red wheat malt
4 lbs of white wheat malt
- - heat 11 gallons of water to boil
- turn on agitator
- slowly stir in corn meal and honey malt
- keep heating until temp is 204F
- add alpha enzyme 20ml (1.6ml/gal)
- occasional stir for 100 minutes with occasional heat to keep it around 200F
- add 6 gallons of cold water
- stir and circulate cold in jacket if needed to get to 140F
- adjust mash ph to 4.5 using citric acid
- add pale malt and wheat malts
- add gluco enzyme 14ml (0.8ml/gal)
- stir for 30 minutes, no heat
- cool jacket while stirring to 86F and pitch yeast and oyster shells
- ferment in the still about a week
- strip it
I'll be 2lbs of grain per gallon. My guess is around 1.050 OG and ABV around 6% assuming a good ferment. Seem reasonable?
