That chart might be controversial for charred oak barrels. I was told that small barrels extract the oak flavor much faster than they "age" the liquor which takes time no matter how small of a barrel you use, so you need to keep it in them a shorter time than this would indicate.

Basically, you won't get the same results with 9 months in a 10 liter barrel that you'd get for 2 years in a 53 gallon barrel even though the math and a simple surface area ratio would make you guess that it would work.

All well and good but you have to have something to go by, to give you an idea, a guideline. If I keep tasting my barrels, they will be gone before they are ready.
