This is was my first time cooking with grain in, so I was worried about scorching since I cook on open flame in stainless pot. I read somewhere that you need to stir the wash until it boils so it doesn't scorch. Basically I did as told - I put the thermometer in to see where I'm at and started stirring. When I got to around 85C it started steaming a lot and I got scared. Since I was cooking inside on open flame I wasn't sure how dangerous that steam is and what could happen. I put a lid on but still removed it occasionally to stir until I got it to boil. After that I put the condenser on and run as normal.
How far is it safe to go like that ? And maybe there is a better method for what I was doing without changing my equipment ?
FWIW I didn't scorch it and it's delicious !

well you're right to be cautious, that steam is alcohol laden and very flammable. it is also heavier than air and will sink as it comes out the top of the pot.
sounds like you did what you needed to do, to get the job done though.
the only thing i can think of to improve on is install a mechanical agitator that stirs while the lid is on...but that does not meet the criteria of not changing equipment.

I definitely remember Dunderhead talking about stirring while coming to temp before the cap goes on.
I would imagine having a good understanding of heat management would help during this part of start up.
goose eye has talked about this at length too. Though he refers to how you rake your coals back and forth depending on how much heat you need to manipulate.
Maybe goose will chime an explain how he heard ole boys do that?
