Its starch, not sugar -- you would need to add enzymes to convert them. Don't know which ones though. It would probably be easier and cheaper to just use cane sugar.

I didn't read you post well before I replied the first time. If you're using malt with the cornstarch, the malt should have enough extra enzymes to convert some starch.
How much corn starch a pound of malt can convert is the question. In general, two pounds of malt can convert 1 pound of adjuncts (corn or rice). But the corn starch is already concentrated, so I don't think the 2:1 ratio will still hold.

I am happy to see that somebody is posting. I cruise here and there to learn and to help others if I can. All I have ever used cornstarch for is to thinken stuff like Chinese stir fry. But I'd bet a nickle somebody knows how to make something potable from it! See Y'all

Light travels faster than sound. That is why some people appear bright until you hear them speak.
Re: corn starch
An answer seems to be the fungus used in making sake. The fungus takes starch and makes it sugar.Grayson_Stewart wrote: But I'd bet a nickle somebody knows how to make something potable from it! See Y'all
