Pot vs Reflux vs Plates

Hi,

I'm sure this has been asked before, but my search didn't come up with the definitive answer I'm looking for. Please scold me profusely and point me to the right link if you know any :D

My question is about bubble plates. Specifically, why do we need them.

For flavor spirits, you use a pot still, which is, put simply, pipe -> bend -> bend -> condenser
For neutrals, reflux - pipe with packing (scrubbers, etc), short condenser (aka dephlagmenter) -> bend -> bend -> condenser
I understand (and used) the operation behind each of the above with their various configs (cm, fm, etc)

So in which cases would you use plates?

Again, sorry if this question has been beaten to death.
