New carboxylic ester chart

Post by Evil Wizard »

In the spirit of James Kennedy Monash, who made some lovely infographics relating to taste molecules, I spent several hours building a chart with the flavours of each ester written out and a link to thegoodscentscompany.com website. I found the original chart a bit lacking as it only had a single picture for each ester. I also increased the number of carboxylic esters.

This will be useful for anyone generating esters from ingredients, like me, or simply to identify esters coming up in their distillate.

I'm posting it as a Word doc so you can add your own tasting notes and also because I couldn't readily figure how to translate the links to a PDF.

Thanks EW for putting that together. Very helpful to have all this summarized in one place.

Hey Evil Wizard - would you be ok if I translate this into a Wiki page?

Oh absolutely Yinzer, I'd feel famous. I was reading you on an old Rum Carboxylic thread by Der Wo - we have some common interests. I just ordered all the carbox acids and all the higher alcohols from a chemical supply house. Going to do some in depth esterification trials here. Nothing better for covid boredom than fun experimentation.

As a link yes, but I am going to translate the doc to a wiki entry so it's clickable.
