Hi, I'm beginner of making mezcal, actually it's my first time.
I live in Korea, which has not good climate for growing agave, so I can only get small agave for making mezcal.
Also, because i'm such a poor sophomore, I cannot buy lots of agave to get pina.
So, what I have thought is
"Let's make mezcal with whole agave, instead of using only pina."
I bought Agave Potatorum, which has pretty thick leaves, and I think it might contain some sources to make mezcal.
But what I'm worry about is traditionally we don't use leaves when making mezcal, because leaves make mezcal bitterness.
So how can I use agave leaves for making mezcal by reducing those bitterness?

My goal when I got started was to make tequila. But after researching and reading everything here I think it's pretty much unanimous that it can't be done with the syrup. I will still be trying some experiments myself to satisfy my curiosity.
I would appreciate any feedback you may have if you try these agave potatorum things.
Good luck and

Freedom had been hunted round the globe; reason was considered as rebellion; and the slavery of fear had made men afraid to think. But such is the irresistible nature of truth, that all it asks, and all it wants, is the liberty of appearing.

Slice, roast, smoke, macerate in your finest neutral with the approximate amount of alcohol that you would have got if you had fermented it, dilute to 8% ABV and strip with the agave in the pot to get low wines of around 27%. Spirit run into at least 15 jars and choose a blend you like from them.
Record everything you do so that you can make improvements next time.

Oh thank you. I will record everything to report the progress. I think it will take 2 weeks to make it.
