A couple of bottles of gin for this Xmas. It isn't OEG, so it doesn't benefit much, if at all, from resting.

Running my first 93%rye7% biscuit strip run.squeezed grain but
The wash would not clear, kept at 40f for 48 hours.it did settle with lots sediment at bottom, but it was very chocolate milk looking. Very interesting smells,nothing bad but interesting.

First time doing a large gin run (well, larger than my normal 1L or less experiments). Ran 4.5L of Artooks V3 gin. Had hoped to run it a few weeks back, but the kids and then us managed to catch the flu (and every other virus going around... except for Covid this time) which kinda put the brakes on stilling. Even now I can't well smell what I just made, I'm relying on how well it worked in the past.
Got lots to start running after Christmas. Really hoping I manage to free up some time in the new year.

Ended up with 4 gallons at 91%. Underwhelming. Too light almost like vodka. Decided to make a new batch of 100% yellow dent. 45 gallons on 80# yellow dent. Dumped 1L fresh triple ran, 3 roller milled cracked corn into the 91% carboy and we'll let it macerate until we're ready to run. Hoping to get an interesting flavor profile when we run it combined with 2 plates. Should get two solid runs

Brewed my first IPA…. Never did a beer before (at least to stay as a beer…). Used Cascade and Chinook hops following a recipe from a local brew shop.
I just read an article about the dangers of drinking that scared the crap out of me.

Congrats on your first IPA!
IPA has been my favorite beer style since I started brewing in the early 90s.
Going over my beer brewing records I see at least 28 IPAs I've made since then (I lost records of about 20 extract/grain batches from the mid 90s, and I'm sure some of those were IPAs as well).
I've used lots of different hops - Amarillo, Cascade, Centennial, Chinook, Citra, Columbus, Simcoe, Summit - and Chinook/Cascade will do it right nicely.
The bourbon mash is happily bubbling away at 89F in a 55F basement.

Stripped 20 gallons of a caramel corn whiskey mash, and cleaned the garage.

Spirit run on some bourbon sugar head. Finally taking the time to REALLY slow down, and I have to say, I can tell a huge difference. The more I learn here, the better what I make becomes.

A drain valve is a must have. Tring to drain a boiler full of hot slops is dangerous. Though I do believe that the right place to pour hot backset is down the sink drain. Stripping a single malt with 20% specialty grains and 5% peat in the mash bill. Nothing too extreme in the roasting department, just lots of toffee/honey type malts.

It's an 8 gallon pot, and I've emptied it into the sink plenty of times without issue. This time, everything wanted to flow back down the side and all over the floor. Fortunately, it was from yesterday's run, so nice and cool, but it was still a mess.
